The bakery zone: bays for fresh bread and pastry, with wooden shelves, crumb trays and glass fronts where the goods need protecting. This is where a customer decides whether the store is fresh.
Why this
The door is not in the aisleGlass doors that lift up rather than swing out. The difference shows on a Saturday, when two customers have to pass each other at the bread.
The crumbs have somewhere to goA hidden crumb shelf under the display. The bakery area looks tidy at closing time without anyone having spent time on it.
From a full wall to one bayEleven configurations from 800 mm to 3900 mm wide. The same character whether the store bakes its own or takes in finished bread.
Bag and glove where the customer standsThe bag module and glove holder are part of the bay, not hung on afterwards. Self-service bread requires it, and the inspector asks for it.
The large bake-off wall: 3000 mm wide, 2400 mm high, 800 mm deep. Pull-out wooden shelves on a metal base, a lift-up glass door, a dedicated baguette shelf, LED at 3000 K and a promotion canopy. The main fixture in a store that bakes its own.
